What spices should I add to the meat I’m beating for the grill? And, is it better to cook with wood?

My cousin, who is in the cattle business, is sending me some brisket and I’ve never cooked a day in my life.

I hope you are not “beating” a brisket, whether cooking on the grill or in the oven. Marinate a brisket for at least eight hours, preferably 12, rubbing it with salt, pepper, garlic, and onion salt. Add a little bit of liquid smoke to your marinade.

If possible, prepare your brisket over wood, cooking for at least six to eight hours, turning your brisket every hour. If you are cooking your brisket over a gas grill, cover with aluminum foil and cook for at least four hours, turning at least twice. When I prepare a brisket in the oven, I check every hour, and may turn every hour.

Nothing tastes better than a brisket that is cooked to perfection! So tender, so juicy!
